Named in honour of the Diletti family who founded Castle Rock Estate, this range of wines explores the idea of textural wines. The textural component of this Pinot Noir is derived from the tannins created through whole bunch fermentation. Handpicked estate Pinot Noir fruit. Combination of whole bunch fermentation and carbonic maceration. Ferments were foot stomped throughout fermentation. 9 months barrel maturation on medium lees in seasoned French oak barriques and puncheons. Barrel selection for final blend. 100% whole bunch. Bright, ruby. The nose is Spicey and floral up front, complimented by blackcurrant and a hint of confection. Good weight on entry, supple, with super fine tannin structure. Tannin and acid play weaves through bright, juicy berry fruits. Nice herbal/spice complexity from the whole bunch treatment. A really elegant wine.
