Tasting Notes

Colour: Deep ruby.

Bouquet: A classic cool-climate Shiraz nose which shows liquorice, plum fruit, spice and black pepper characters. There is some subtle complexity and quality French oak characters of char and cedar.

Palate: A savoury and balanced palate, filled with plum fruit, black olive and a thread of black pepper spice woven through. This wine provides power and drive yet, wonderful restraint thanks to a bright acid backbone balanced by firm structural tannins reminding us of its cool climate origins. High-quality French oak adds a lick of char to the palate and blends well with the depth of the fruit flavour. The wine is youthful and poised with great length.

Food Accompaniment: An ideal complement to red meats and hearty dishes.

Cellaring Potential: Will continue to improve and develop complexity with age; cellar for 10 years+.

Winemaking: The 2021 Castle Rock Estate Shiraz is from grapes grown in the Porongurup sub region of Great Southern. The grapes were fermented in two tonne open fermenters and plunged dependent on tannin extraction to build colour and complexity. Filled to French barriques. New oak making up 36% and matured for 15 months with periodic racking prior to bottling.

93 Points “Medium weighted, silky in texture (with a little grip), very perfumed, loaded with spice and defined by raspberry and red cherry fruits while generally acing it as a very appealing shiraz.
