Tasting Notes

Made from the original plantings in 1983 and 1986. Matured in French oak Barriques for 15 months this wine highlights Cabernet from the Great Southern, off mature vines.

Colour: Deep red colour.

Bouquet: Varietal bouquet which shows blackberry and cassis aromas, backed by hints of choc mint, dried bay leaf and cedary oak characters.

Palate: Blackberry and cassis fill the front palate, providing weight and generosity, leading into firm tannin structure on the mid palate. Fresh acidity, interwoven through the palate, provide balance to the tannin structure, creating drive and length. Dried bay leaf and subtle choc mint join the cedary oak characters in offering layers of complexity to compliment the balance of the mid palate. A long, fine finish caps of a Cabernet Sauvignon of poise and balance.

Food Accompaniment: An ideal accompaniment to red meats and hearty dishes. Will also go well with ripe cheeses at the end of a meal.

Cellaring Potential: Will continue to improve and develop complexity with age; cellar for 10 to 15 years.
