Tasting Notes

Colour: Bright, Ruby 

Bouquet: Whole bunch fermentation is driving the bouquet, a seductive, savoury perfume of morish herbs and spice, with a bright line of red berries adding freshness.  

Palate: The red berries are bright and juicy on the front palate, providing plenty of fruit sweetness but is kept in check by a refreshing red bitters character. An undercurrent of bouquet garni herbs keeps the palate morish. Besides the herb and spice notes, the whole bunches have imparted a super fine and silky tannin structure that is in perfect balance with the natural acidity running through the palate. The tannin and acid harmony drives an amazingly long and fine finish. Very approachable while young but will reward careful cellaring,  up to 10 years. 

Food Accompaniment: Pair with Woodfired Pizza, Grilled Pork Sausages, Mushroom Toasties. 

Cellaring Potential: Will continue to improve and develop complexity with age; cellar for 10+ years.

An alternative approach to our house style of Pinot Noir production, this wine consists of 100% Handpicked and whole bunch fermented fruit, creating lifted aromatics and a fine tannin structure. 9 months of maturation in old French barriques results in a highly aromatic wine with silky texture and amazing structure and length. Can be enjoyed now but has the balance and structure to cellar.
